TRADITIONAL COLOMBIAN OVEN
The Traditional Colombian Oven is a
device of the traditional cuisine of the Colombian Caribbean coastal
region and dwellers bordering the Magdalena's river it is used as a
resource for baking preparations such as kekis, cuca, polvorosas,
coastal almojabanas, enyucado and other delights.Where was the usage
of this oven originate ? who invented it? I do not have knowledge to
delve into the matter but surely the answer to both questions is
the popular human creativity and resourcefulness.
The temperature adjustment is an art
depending on the recipe is done by modifying the height the oven is
over the coals, the amount of coals, if the coals are alive or semi
off , put coals under or boths sides over and under , also the coal
distribution does a difference in the heat if it is piled or
segregate.
Is this oven used today? yes but very
little for those who know it and do not have a gas or electric
oven.Thereare people claiming that this oven retains preparation's
moisture better than another oven and flavored them giving a unique
and delicious twist.
