COCONUT BROWN FLAKES
The coconut brown flakes are caramelized with sugar or panela and it is used as decoration for a popular well known dessert called "Alegria" (happiness, joy) but you can use as you like just get inspired!.
INGREDIENTS:
100 gr of sugar
25 ml water + 5 gr lemon.
50 natural coconut
25 ml additional water
INSTRUCTIONS:
1. In a heavy saucepan over medium heat put the sugar and 25 ml of water + 5 gr of lemon.
2. Slide the coconut in slim flakes and add it to the caramel when it is brown
3.Stir and add 25 ml of extra water and leave the caramel to thicken.
4.Once it is done , immediately place the caramelize flakes on a silicone sheet separating them carefully each other.
