FLUFFLY YUCCA FRIES

At the end of the recipe there are "TIPS" to avoid the common mistakes as : greasy fries or yucca sticks become into crumbs when are frying.
INGREDIENTS:
-Good quality yucca root
-water
-salt for taste
-abundant oil to fry
INSTRUCTIONS:
1.Peel and boil the yucca root in abundant water.
2.Drain the yucca root remove the thick woody part across the edge of each piece and crush the yucca root (CRUSH! , DON'T BLEND! it is important for success with this recipe) then knead to get compact dough.
3. Shape the dough into a rectangle 1 cm thick and cut into pieces as you like. be thorough in pressing the dough it is important.
4.Deep fry in really hot oil , which takes just seconds to crisp and golden. If you prefer bake the yucca sticks brush with oil a baking tray, spread the yucca sticks and brush the yucca sticks with oil on all sides and bake at 180ºC until brown the result changes a little bit but it's still good.
TIPS:
Question 1 . Why my cassava sticks go to pieces and are dispersed throughout the oil?
The yucca root was overcooked and absorbed a lot water from the cooking. you will know it because the yucca will look light see-through.
you didn't press the dough enough .
the boiled yucca root stay long time since was cooked to be crushed
You tried to fry big a large amount of yucca sticks a same time.Fry 5 sticks by friying.
Question 2. Why my yucca fries are so greasy?
You didn't press the dough enough .
The oil wasn't really hot
You didn't crush the yucca , you blended it.
