COLOMBIAN AREQUIPE SAUCE
Arequipe sauce(cajeta sauce , dulce de leche sauce).
INGREDIENTS
-250 ml whole milk
-125 gr sugar
-20 gr salted butter
-1/2 Tsp bicarbonate
INSTRUCTIONS:
1.Mix the milk, sugar, and butter into a heavy pot and bring to cook over high heat.
The salted butter gives to the sauce a special flavor and texture my advice is, therefore, that try doesn't omit it.
2.Let the mix boil for 10 minutes and then add the bicarbonate, don't add it before because the sauce going to take a darker brown color.
3.Stir every now and then from 10 until 20 of the cooking time and Stir continued after that until the sauce is the required texture.
4.Pour into a bowl and let cool down.You could put it in the fridge, but the sauce texture will look like sticky.
