COLOMBIAN COCADA RECIPE
The cocadas are well known along center , South America and Spain , it is name different way as : cocada negra ,cocada morena , cocada prieta (brasil), chancacas (Colombian pacific cost) , conservas de coco (venezuela), dulce de coco (puerto rico).
There are different version of this same recipe by adding or replacing some ingredients common addition to the recipe are : lemon leaves , lemon juice , butter , egg common replacing are : caramelized sugar by panela ( also name in other Latino American countries as : raspadura, rapadura, atado dulce, chancaca, empanizao, papelón, piloncillo o panocha ).
INGREDIENTS:
150 gr natural grated coconut.
150 gr of panela
300 ml water.
INSTRUCTIONS:
1.In a heavy saucepan over medium-high heat put together the ingredients.
2. Stir the ingredients occasionally to mix them uniformly.
3.Leave the preparation to dehydrate until you can see the bottom pan really clean.
4. Once it is done , immediately place spoonfuls of the dough onto a wet silicone sheet and shape with a spoon as you desire.
